2 cups whole wheat penne, cooked
3 cups chopped tomatoes
1 package (10 ounce) frozen, chopped spinach, thawed and well drained
1/4 cup scallions sliced
1/2 cup fresh basil, chopped, or 1½ teaspoon dried
1/4 cup feta cheese, crumbled
DIRECTIONS
In a pot, combine pasta, tomatoes, spinach, scallions, and basil. Cook, stirring often, until heated through, about 2 minutes. Stir in feta cheese and cook for 1 minute.
Yield: 8 Servings
