Red, Green, & Blue Salad

INGREDIENTS

2 medium plum tomatoes, seeded and chopped
1/2 medium cucumber, seeded and chopped
1/4 cup red onion slivers
2 tablespoons crumbled gorgonzola cheese
2 teaspoons light balsamic salad dressing
Salt to taste
Ground black pepper to taste

DIRECTIONS


In a medium serving bowl, combine the tomatoes, cucumber, onion, cheese, and dressing. Toss well. Season to taste with salt and pepper. Serve immediately.

Yield: 6 servings (3 cups); Serving = 1/2 cup
